Chicken Tarragon - cooking recipe

Ingredients
    1 1/2 lb. skinned, boneless chicken breasts, cut into strips
    1/4 tsp. salt
    1 Tbsp. dried tarragon leaves
    1/4 c. white wine
    1/4 tsp. pepper
    1 lb. asparagus, cut into 1-inch pieces
    1 small red pepper, cut into thin strips
    1 Tbsp. olive oil
    3 c. cooked rice, cooked in chicken broth
Preparation
    Season chicken with salt and pepper.
    Cook chicken, asparagus and red pepper in olive oil in a large skillet over medium heat for 2 to 3 minutes.
    Add wine and tarragon.
    Simmer 1 1/2 minutes. Heat thoroughly.
    Serve over rice.
    Yields 4 servings.
