2 Month Bran Muffins(Low Cholesterol!) - cooking recipe
Ingredients

1 box original All Bran cereal
2 c. boiling water
1 c. canola oil
3 c. sugar
1 carton Egg Beaters (equals 4 eggs)
1 qt. buttermilk
5 c. unbleached flour
1 tsp. salt
5 tsp. baking soda
Preparation

Combine 2 cups Bran with 2 cups boiling water.
Let stand. Combine oil, sugar, Egg Beaters and buttermilk.
Sift together and add flour, salt and soda.
Stir in remaining dry All Bran.
Stir in soaked All Bran.
Store in tightly covered container up to 2 months in refrigerator.
Spoon into muffin pan sprayed with oil or oiled, 2/3 full of batter.
Bake 20 minutes at 400\u00b0.
