Lemon Chicken - cooking recipe

Ingredients
    4 chicken breasts, skinned and boned
    2 Tbsp. margarine
    1 Tbsp. oil
    2 Tbsp. lemon juice
    1/4 tsp. salt
    1/8 tsp. pepper
    1 c. half and half
    4 lemon slices (seeded)
    1 Tbsp. minced fresh parsley
Preparation
    In a skillet, saute chicken in margarine and oil.
    When brown, remove chicken and discard margarine and oil.
    Add sherry, lemon juice, salt and pepper.
    Simmer 2 minutes, stirring constantly. Remove from heat and slowly add half and half.
    Heat until sauce begins to bubble.
    Add chicken and simmer 20 minutes until tender. Transfer to a serving dish and pour over top.
    Garnish with lemon slices and parsley.
