Black-Eyed Pea Shrimp Gumbo - cooking recipe

Ingredients
    2 c. water
    2 (14 1/2 oz.) cans cajun-style stewed tomatoes
    1/2 tsp. cajun seasoning
    1/4 tsp. hot pepper sauce
    2 garlic cloves, minced
    1 medium onion, sliced
    1/3 c. uncooked regular rice
    1 (10 oz.) pkg. frozen cut okra, thawed
    2 (15 oz.) cans black-eyed peas, drained
    3/4 lb. (1 1/2 c.) medium size fresh shrimp, peeled and deveined
Preparation
    In a 6-quart Dutch oven, combine water, tomatoes, hot pepper sauce, Cajun seasoning, garlic and onion.
    Bring to a boil. Reduce heat; cover and simmer 20 minutes.
    Stir in rice and okra. Simmer, covered, an additional 15 minutes.
    Add shrimp and peas; cook until heated through.
    Makes eight 1 1/4-cup servings.
