Parmesan Baked Eggplant - cooking recipe

Ingredients
    1 medium size eggplant
    salt and pepper to taste
    Parmesan cheese to taste
    1 or 2 eggs, well beaten
    about 3/4 c. dry bread crumbs (may use Italian seasoned)
Preparation
    Slice unpeeled eggplant crosswise into 1/4-inch thick slices. Sprinkle with salt.
    Dip each slice first into beaten egg and then into bread crumbs.
    Spray baking sheet with nonstick spray.
    Lay eggplant slices flat, not overlapping.
    Sprinkle with salt, pepper and Parmesan.
    Dot each slice with butter, if desired, but it really doesn't need it.
    Bake at 450\u00b0 for about 20 minutes or until browned.
