Island Chicken With Plums - cooking recipe

6 lb. chicken parts
salt and black pepper
2 1/4 c. boiling water
3 tsp. chicken soup base
1 c. apricot nectar
1/4 c. lemon juice
1/4 c. soy sauce
1/2 c. cornstarch
1 1/2 c. drained chopped plums
1/3 c. chopped green onions
1/3 c. peach preserves
1/4 c. packed brown sugar
1/2 tsp. ginger
1 medium clove garlic, crushed
cooked rice
