Hearty Potato Soup - cooking recipe
Ingredients

6 medium potatoes, peeled and diced
2 carrots, diced
6 celery stalks, diced
2 qt. water
1 onion, chopped
6 Tbsp. butter
6 Tbsp. flour
1 tsp. salt
1/3 tsp. pepper
1 1/2 c. milk
Preparation

In a large pan, cook potatoes, carrots and celery in water until tender, about 20 minutes.
Drain and save the liquid.
In same pan, saute the onion in butter until soft.
Stir in flour, salt and pepper.
Gradually add milk, stirring constantly, until thickened.
Gently stir in cooked vegetables and 1 cup or more of reserved liquid until soup is desired consistency.
You can also add cooked beef or fried ground beef to this.
Yields 8 to 10 servings/2 1/2 quarts.
