Zucchini Pancakes - cooking recipe

Ingredients
    1 small zucchini, shredded
    1 c. self-rising flour
    1 egg
    1/2 c. Parmesan cheese
    salt and pepper to taste
Preparation
    Mix all ingredients well.
    If batter is too thick, add a little water.
    Fry in hot shortening.
    Drain on paper towels. Enjoy with any meal.
