Health Relish - cooking recipe
Ingredients

1 c. diced cucumber, peeled and seeded (if necessary)
3 c. cabbage, finely chopped
1 bell pepper, seeded and diced (can use green, red or yellow)
2 carrots, grated
1 1/3 c. diced onions
1 tsp. mustard seed
1 tsp. celery seed
salt and pepper to taste
1 c. cider vinegar
1/2 c. sugar (can use artificial sweetener to equal 1/2 c. sugar)
Preparation

Mix cucumber, cabbage, pepper and carrots in bowl.
Blend well.
Set aside.
Place mustard seed, celery seed, salt, pepper, vinegar and sugar.
Heat all until warmed, just until sugar dissolved.
Set aside to cool.
Pour over vegetables and blend well.
Makes about 6 cups.
Refrigerate 2 or 3 hours.
