Shrimp Supreme - cooking recipe

Ingredients
    1 lb. medium shrimp, peeled and deveined
    1 Tbsp. plus 1 tsp. cornstarch
    1/4 tsp. sugar
    1/4 tsp. baking soda
    1/4 tsp. salt
    1/8 tsp. pepper
    1/2 c. vegetable oil
    1/2 c. chopped onion
    1/4 c. chopped sweet red pepper or banana pepper
    1 small clove garlic, minced
    1 c. chopped, unpeeled zucchini
    3 1/2 c. cooked Uncle Ben's rice
    3/4 c. cashews (optional)
Preparation
    Cut shrimp in half lengthwise.
    Combine next 5 ingredients; mix well.
    Add shrimp and toss gently to coat.
    Let stand 15 minutes.
    Heat oil in a large skillet; add shrimp.
    Cook, stirring constantly, for 3 to 5 minutes (until shrimp turn pink).
    Remove shrimp and set aside.
    Drain drippings, reserving 2 tablespoons in skillet.
    Add onion, chopped red pepper and garlic to skillet. Saute until tender.
    Add zucchini and saute 2 minutes.
    Stir in shrimp, cooked rice and cashews (optional); cook over low heat, stirring constantly, until thoroughly heated.
    Yields 4 servings.
