Fried Tomatoes - cooking recipe

Ingredients
    5 medium tomatoes
    1 box Jiffy corn muffin mix
    1 egg
    1/3 c. milk
    cooking oil
Preparation
    Fill skillet half full with cooking oil.
    Prepare muffin mix as directed, using egg and milk.
    Slice tomatoes and dip each slice into muffin batter.
    Cook each coated piece for 1 to 2 minutes in hot oil.
    Let drain on paper towel covered plate.
    Salt and pepper to taste.
    Can also use batter for fried squash.
