Blue Kraut Deluxe - cooking recipe

Ingredients
    1 head red cabbage, shredded
    1 Tbsp. sugar
    1 onion, chopped
    1/4 c. raspberry or currant jelly
    3 Tbsp. bacon, minced
    1 apple, cored, peeled and chopped
    1 1/2 c. water
Preparation
    Wash and drain prepared cabbage and cut in quarters.
    Discard core and tough ribs and shred cabbage.
    Fry bacon in a large skillet until browned.
    Add sugar to hot fat and saute slowly until golden.
    Add apple and onion.
    Cover and braise over very low heat 3 to 4 minutes.
    Place shredded cabbage in skillet or Dutch oven with cover.
    Slowly pour vinegar and jelly over kraut and stir to mix well.
    Cover and braise slowly for 10 minutes.
    Add water, cover and let simmer for 1 1/2 to 2 hours until cabbage is fork-tender.
    Yields 6.
