Pollo Aquascalientes - cooking recipe

Ingredients
    1 cut up chicken
    1/4 c. olive oil
    1 chopped onion
    1 large can tomatoes
    1 Tbsp. lemon juice
    1 tsp. sugar
    1 tsp. salt
    1 tsp. oregano
    1 Tbsp. chili powder
    1/4 tsp. pepper
    shake or two of red pepper
Preparation
    Cook chicken in olive oil in a deep heavy pot, cast-iron is best, 15 to 20 minutes, turning.
    Sprinkle remaining ingredients over chicken.
    Cover; turn down heat to a strong simmer.
    Cook another 45 to 60 minutes until chicken is very tender.
    Serve chicken on the side, with broth in a bowl.
    Sprinkle broth with basil or serve together in a large soup bowl.
    Sprinkle with basil.
