Squash Souffle - cooking recipe

Ingredients
    4 medium, yellow squash, sliced
    1 medium, chopped onion
    salt and pepper to taste
    4 crackers, crushed
    4 Tbsp. melted butter
    2 eggs, separated
    1/3 c. grated cheese
Preparation
    Steam onion and squash together until tender; drain excess water and mash well.
    Add crackers, salt, pepper, butter, beaten egg yolks and cheese; blend well.
    Fold in stiffly beaten egg whites.
    Pour into baking dish.
    Bake about 45 minutes or until set and slightly browned.
