Mexican Chicken And Rice - cooking recipe

Ingredients
    1 Tbsp. oil
    1 lb. boneless chicken breasts, cubed long
    1 small onion, long slices
    1 small green pepper, long slices
    1 (10 oz.) pkg. frozen sweet corn
    1 c. chicken broth
    1 c. mild salsa
    1 1/2 c. Minute rice
    1/2 c. Cheddar cheese
Preparation
    Heat oil in large skillet on medium-high heat.
    Add chicken, onion and peppers.
    Cook and stir chicken until cooked through. Add corn, broth and salsa.
    Bring to a boil.
    Stir in rice and cover.
    Remove from heat, let stand 5 minutes.
    Sprinkle with cheese, cover until cheese melts.
