Gratineed Ziti - cooking recipe

Ingredients
    1 medium onion, coarsely chopped
    3 medium garlic cloves, finely chopped
    2 Tbsp. extra virgin olive oil
    1 (35 oz.) can Italian peeled tomatoes
    1/4 tsp. crushed red pepper
    3/4 tsp. salt
    1/4 tsp. black pepper
    10 oz. dried ziti (about 3 c.)
    1 lb. fresh spinach, stems discarded, thoroughly washed and coarsely chopped
    6 oz. part skim Mozzarella cheese, cut in 1/2-inch diced pieces
    1 c. freshly grated Parmesan cheese
Preparation
    In a large skillet, cook onion and garlic in oil until onion is soft.
    Break up tomatoes and add with juice to skillet.
    Stir in crushed red pepper.
    Increase heat and boil sauce.
    Stir until liquid has evaporated (about 18 minutes).
    Season with salt and pepper.
    Keep warm.
