Parmesan Potato Puffs - cooking recipe
Ingredients

2 medium size baking potatoes, peeled and cubed (about 1 lb.)
1/4 c. grated Parmesan cheese
2 Tbsp. skim milk
1/8 tsp. salt
1/8 tsp. white pepper
1/8 tsp. nutmeg
1/4 c. frozen egg substitute, thawed
1 Tbsp. grated Parmesan cheese
Preparation

Cook potatoes in boiling water to cover 30 minutes or until tender.
Drain potatoes and mash. Add 1/4 cup Parmesan cheese and next 4 ingredients.
Beat at medium speed of an electric mixer just until mixture is smooth.
Stir in egg substitute.
