Pork Roast Fajitas - cooking recipe

Ingredients
    1 pork roast
    2 Tbsp. oil
    1 c. green pepper strips
    1 c. chopped tomato
    3/4 c. onion slices
    1/4 lb. Velveeta cheese spread, cubed
    4 (8-inch) tortillas
Preparation
    Cook roast until it falls apart.
    Cool.
    While cooling, slice peppers, onions and cheese cubes.
    Trim away fat from roast and strip into small strips.
    Heat oil in large skillet.
    Add peppers, onions and roast.
    Saute for 5 minutes.
    Add cheese cubes.
    Stir until cheese has melted.
    Fill each tortilla with pork mixture. Top with tomatoes.
    Fold.
