Barbecued Salmon - cooking recipe
Ingredients

1/2 c. butter
2 cloves garlic, minced
1/2 c. dry white wine
3 Tbsp. chopped fresh herbs, such as chives, thyme, chervil, basil and parsley
2 tsp. grated lemon rind
1 whole chinook (king) salmon, butterflied with skin intact
Preparation

Melt 1 tablespoon of butter over low heat in a small, heavy saucepan.
Add the garlic and cook briefly.
Stir in wine and cook until reduced to 1/2 cup.
Add the remaining butter and stir until melted.
Stir in herbs and lemon rind.
Set aside.
