Sweet And Sour Chicken - cooking recipe

Ingredients
    1 (20 oz.) can pineapple chunks in juice
    water
    1/2 c. packed brown sugar
    1/4 c. cornstarch
    1/2 tsp. ginger
    1/2 c. cider vinegar
    1/4 c. soy sauce
    1 1/4 c. green pepper strips
    1 c. sliced onion
    1 c. sliced carrots
    2 c. cubed, cooked chicken
    hot, cooked rice
Preparation
    Drain pineapple; reserve juice.
    Add enough water to the juice to make 2 1/2 cups.
    Combine brown sugar, cornstarch and ginger. Gradually stir in the 2 1/2 cups juice with the vinegar and soy sauce.
    Microwave on High for 10 minutes, stirring every 2 minutes until desired thickness.
    Add pineapple, green pepper strips, onion, carrots and chicken; cover and place back in the microwave on High for another 20 minutes or until the vegetables are tender-crisp, stirring every 5 minutes.
    Serve with hot, cooked rice.
    Yields 6 servings.
