Smoked Turkey - cooking recipe

Ingredients
    1 (12 to 14 lb.) turkey
    1 gal. water
    4 to 5 Tbsp. liquid smoke
    1/2 c. pickling salt
    1 c. Morton Tender Quick
Preparation
    Make
    brine
    using
    ingredients listed.
    Soak turkey 24 hours. Rinse
    off
    brine and dry with paper towels.
    Oil bird lightly with
    salad
    oil.
    Anchor neck skin.
    Place turkey on rack in roaster,
    breast side down.
    Bake at 350\u00b0 for 1 hour, then at 250\u00b0 for 9 to 10 hours.\tDo not cover.
    When done, let turkey lay
    on breast so juice runs into breast.
    I use turkey breast.
