Green Tomato Pickles - cooking recipe

Ingredients
    1 peck tomatoes
    1/2 tsp. alum
    1/4 tsp. salt
    1 Tbsp. celery seed
    1 c. water
    1 Tbsp. whole cloves
    2 c. vinegar
    4 c. sugar
    2 sticks cinnamon
    1 Tbsp. mustard seed
Preparation
    Slice tomatoes; soak overnight, using 1/4 cup salt to 1 gallon water.
    Drain well; cover with boiling water to which 1/2 tablespoon alum has been added.
    Let stand 20 minutes.
    Drain. Cover with cold water.
    Drain.
    Mix spices, vinegar, sugar and water together.
    Bring to a boil; add tomato slices and again, bring to a boil.
    Place in hot sterile jars.
    Seal.
    Yields 10 pints.
