Hot Potato Soup - cooking recipe
Ingredients

1/4 c. bacon drippings
1 c. chopped onion
1 c. sliced mushrooms
1/3 c. plain flour
3 c. chicken broth
3 c. milk
4 c. diced, peeled potatoes
1/2 c. celery
1 1/2 c. grated Swiss or Cheddar cheese
2 tsp. salt
1/8 tsp. pepper
chopped chives
4 to 6 slices bacon, diced
Preparation

Saute diced bacon in large saucepan.
Add onion, celery and mushrooms.
Saute
until soft.
Blend in flour over medium heat until golden brown.
Stir in chicken broth and milk.
Add potatoes and
simmer
until
tender.
Season
with
salt
and pepper. Garnish with grated cheese and chives.
