Banana Bran Muffins - cooking recipe

1 1/4 c. oat bran or uncooked rolled oats
1 c. all-purpose flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 c. buttermilk
1/2 c. (1 medium) ripe banana, mashed
1 whole egg or 2 egg whites
1/2 c. brown sugar, packed
2 tsp. cinnamon
1/2 tsp. ground nutmeg
1/2 c. vegetable oil
1 c. chopped dates
Preparation

In a large bowl, combine the oats, flour, brown sugar, baking powder, cinnamon, soda and nutmeg until smooth.
In another bowl, combine the buttermilk, oil, mashed banana and egg.
Stir the liquid ingredients into the dry ingredients all at once, stirring just until the dry ingredients are moistened.
Fold in the dates.
