Crab Cakes Maryland Style - cooking recipe

Ingredients
    3/4 lb. fresh crab meat
    2 Tbsp. mayonnaise
    3/4 c. San Francisco seafood breadcrumbs
    3 tsp. green onion, finely minced
    3 tsp. Dijon mustard
    1/4 tsp. salt
    dash of Worcestershire sauce
    dash of Tabasco sauce
    1/2 tsp. black pepper
    2 egg whites
    lemon juice
Preparation
    Pick over the crab meat, removing any cartilage or shell bits. Stir in half the breadcrumbs, mustard, mayonnaise, onion, Worcestershire, Tabasco and seasonings.
    Whip egg whites until frothy and gently work into the mixture.
    Use hands to shape four cakes, then coat with the remaining breadcrumbs.
    Fry cakes in oil until browned on both sides.
    Serve with lemon wedges or tartar sauce.
