Low-Fat Alfredo(Heart Healthy) - cooking recipe
Ingredients

1 Tbsp. butter
1/4 c. all-purpose flour
3 c. low-fat milk (1%)
1 tsp. salt
1/4 tsp. pepper
pinch of nutmeg
3/4 c. Parmesan cheese
1 box cooked fettucini
Preparation

Melt butter in saucepan over medium heat.
Add flour and cook, stirring one minute.
Whisk in low-fat milk and seasonings.
Bring to a boil, whisking.
Reduce heat and simmer, stirring occasionally, 5 minutes.
Toss with Parmesan cheese and cooked fettucini.
Add seafood or chicken for variety.
Yield: About 3 cups sauce.
