Raisin Puffs - cooking recipe
Ingredients

1 1/2 c. golden raisins
2/3 c. water
1 1/2 c. sugar
2 tsp. cinnamon
1 c. margarine
1 tsp. vanilla
2 eggs
1 carrot, finely grated
grated rind of 1 orange
1 tsp. soda
3 1/2 c. flour
Preparation

Simmer raisins in water, covered, until all water is absorbed. Allow to cool while preparing batter.
Mix margarine with sugar until fluffy.
Add cinnamon and vanilla.
Beat in eggs, one at a time.
Add carrots and orange rind.
Blend soda and 1/2 cup of the flour; mix with egg mixture.
Add 3 more cups of flour and steamed raisins.
Mix well.
Shape by teaspoonfuls into balls.
Roll in dish of cinnamon sugar.
Bake at 375\u00b0 on greased cookie sheet for 9 minutes.
Remove from oven before firm for chewy texture.
Makes 72 cookies.
