Baked Chicken Reuben - cooking recipe

Ingredients
    4 whole boneless, skinless chicken breasts, halved
    1/4 tsp. salt
    1/8 tsp. pepper
    2 c. sauerkraut, rinsed and drained
    1 1/4 c. low calorie Russian dressing
    4 slices low-fat Swiss cheese
    1 Tbsp. chopped parsley
Preparation
    For more flavor, use low-fat (lite) American cheese.
