Arkansas Pan Fried Potatoes - cooking recipe

Ingredients
    6 to 8 potatoes
    2 to 3 Tbsp. oil or shortening
    salt and pepper to taste
Preparation
    Peel and cut potatoes into small shoe string size.
    Heat oil in an iron skillet on high.
    Pour potatoes into skillet.
    Salt and pepper to taste.
    Turn stove to medium-high; cover and every few minutes turn with a spatula.
    Cook until done and brown to your liking.
    (Do not stir, they will tear up.)
