Eggplant Pie - cooking recipe
Ingredients

1 medium eggplant, peeled and cut lengthwise into 1/4-inch thick slices
2 Tbsp. olive oil
1/2 c. chopped tomatoes
1/2 c. chopped green peppers
1/2 c. chopped onions
1/2 c. mushrooms
1 tsp. dried oregano
1/2 tsp. garlic powder
1/2 c. grated Mozzarella cheese
1/2 c. grated Cheddar
2 tsp. Parmesan
Preparation

Saute tomatoes, peppers, onions and mushrooms in a little oil. Broil eggplant slices.
Brush with the 2 tablespoons olive oil, 5 minutes to a side.
Arrange in a 9-inch pie plate overlapping slices to form a crust.
Combine vegetables and place on top. Sprinkle with oregano and garlic powder.
Combine cheeses. Sprinkle on top.
Place Parmesan on top of that.
Bake until cheese is melted at 350\u00b0 for 25 minutes.
Makes 2 to 4 servings.
