Cajun Chicken Dish - cooking recipe

chicken breasts
green peppers
celery
carrots
Louisiana Cajun seasoning
Preparation

Cut green peppers, celery and carrots into chunks.
Boil chicken breasts until done, let cool, then pull off the bone into bite size pieces.
Coat with seasoning mix.
Fry in oil until hot. Add more oil to pan, about 1/3-inch.
Add chunks of vegetables. Mix together.
Cover and simmer for 15 minutes.
Serve over rice, noodles or on tortilla shells.
