Cream Of "Whatever" Soup - cooking recipe

Ingredients
    1 medium onion, diced
    4 oz. butter
    4 oz. flour
    1 1/2 lb. diced potatoes, cauliflower, fresh spinach, broccoli (including stems), carrots or cabbage
    1 1/2 qt. water
    4 chicken bouillon cubes
    2 c. half and half
Preparation
    Place diced vegetable in water and simmer until vegetable is cooked (about 1 1/2 hours).
    Remove from heat.
    In separate 2-quart saucepan, melt butter; add onion and saute until transparent.
    Add flour and blend well.
    Add vegetable and all broth; blend until mixture thickens.
    Simmer 5 minutes.
    Stir in hot half and half.
    Salt and pepper to taste.
