Swiss Enchiladas - cooking recipe

Ingredients
    2 c. cooked chicken, cut up
    1 c. fresh mushrooms, chopped
    1/4 c. chopped onions
    1/2 c. unsalted cashews
    1 c. sour cream
    1 pt. half and half
    1/4 c. margarine
    12 small flour tortillas
    1 c. grated Monterey Jack cheese
Preparation
    Saute mushrooms and onions in margarine in skillet.
    Add chicken and cashews.
    Stir in sour cream and 2/3 cup half and half.
    Cook mixture until thickened.
    Place chicken mixture along center of tortillas.
    Roll up and place, seam side down, in buttered baking dish.
    Pour remaining half and half over rolls. Sprinkle with Monterey Jack cheese.
    Bake at 350\u00b0 for 30 minutes.
