Ingredients

3/4 c. all-purpose flour
1/4 c. yellow cornmeal
1/2 tsp. baking powder
1/4 tsp. paprika
1 c. canned or leftover creamed corn
1 egg, lightly beaten
1/2 c. milk
1 Tbsp. vegetable oil
1 large ear of corn, kernels cut off the cob (about 2/3 c.)
2 Tbsp. minced onion
Preparation

Sift together dry ingredients.
Beat together creamed corn, egg, milk and oil and stir into the dry mixture.
Do not overmix. Let batter rest, refrigerated, for an hour or more before proceeding.
