Sir Thomas Spain - cooking recipe

Ingredients
    4 English muffins, split and toasted
    3 eggs
    8 green onions, minced fine
    3 Tbsp. minced green chilies or 2 whole jalapenos, seeded
    2 Tbsp. butter or oleo
Preparation
    Beat the eggs with a fork in a small deep bowl.
    Add onions and green chilies or peppers.
    Heat butter in frying pan over medium high heat until bubbling.
    Pour in egg mixture.
    Stir gently until cooked.
    Spoon on bottom muffin halves.
    Top with remaining muffin halves and serve immediately.
    Serves 4.
