Lemon Curd - cooking recipe
Ingredients

4 lemons
1 lb. sugar (2 c.)
1/2 lb. margarine
4 eggs
Preparation

Grate and squeeze lemons.
Put juice and rind in pot with sugar and margarine. Bring to a boil. Remove from heat.
Beat eggs and add to lemon mixture.
Cook for 10 minutes, very slowly, stirring all the time to prevent curdling.
Cool and fill jars. Put on toast, biscuits, etc., in the morning.
