Scalloped Eggplant - cooking recipe

Ingredients
    1 eggplant, diced
    1 green pepper, chopped
    1 qt. chopped tomatoes
    4 Tbsp. butter
    1 1/2 c. bread crumbs
    1 onion, chopped
    1 tsp. salt
Preparation
    Preheat oven to 350\u00b0.
    Pare eggplant and dice.
    Melt 2 tablespoons butter in skillet.
    Add green pepper and onion. Cook on low for a few minutes.
    Add tomatoes, eggplant, salt and black pepper.
    Cook 10 minutes.
    Place in shallow greased dish. Melt 2 tablespoons butter; stir in bread crumbs and sprinkle over eggplant.
    Bake until crumbs are brown, 15 to 20 minutes.
