Stuffed Eggplant(Serves 2) - cooking recipe
Ingredients

1 medium eggplant
1/2 tsp. sage
1/2 tsp. garlic
3 eggs, beaten
1 pkg. stuffing mix
1/4 tsp. thyme
1 chopped onion
1 c. bread crumbs
Preparation

Cut top off eggplant and wash and prick with fork.
Put in microwave for 5 minutes to soften.
Let cool.
Cut lengthwise down the middle.
Scoop out seeds and pulp.
Prepare stuffing.
Add onion, eggs and herbs and mix well.
Divide and fill two halves of eggplant.
Brush with egg and coat with bread crumbs.
Brush with oil or butter.
Bake at
350\u00b0 for 30 minutes.
