Brown Rice Salad(Serves 6) - cooking recipe

Ingredients
    4 c. cooked brown rice
    1 c. cooked garbanzos
    1/2 c. green onion, chopped
    1 cucumber, chopped
    1/4 to 1/2 c. parsley, chopped
    3 Tbsp. fresh lemon juice
    1 1/4 tsp. basil
    2 medium tomatoes, chopped
    1 green pepper, chopped
    2 sticks celery, chopped
Preparation
    Mix lemon juice and basil.
    Pour over cooked rice.
    Toss well. Chill for 30 minutes, then add rest of ingredients.
    Chill 2 hours before serving on bed of romaine lettuce leaves.
    Garnish with tomato wedges or cherry tomatoes cut in half and watercress.
