Doctor Bird Cake(A.K.A. Fiesta Cake) - cooking recipe

Ingredients
    3 c. flour
    1 tsp. baking soda
    1 tsp. cinnamon
    2 c. sugar
    1 tsp. salt
    1 1/2 c. cooking oil
    1 (8 oz.) can crushed pineapple with juice
    1 1/2 tsp. vanilla
    3 eggs
    2 c. bananas, diced
    1 c. chopped walnuts (for Fiesta Cake)
Preparation
    Preheat oven to 350\u00b0.
    Grease tube cake or Bundt pan.
    Sift together dry ingredients.
    Add pineapple with juice, oil, vanilla, eggs and bananas.
    Mix until blended, but do not beat.
    Pour batter into prepared pan.
    Bake 1 hour and 20 minutes.
    Cake will crack slightly on top.
    Cool in pan on rack.
    This cake will remain moist and fresh for some time.
    You can also use a 9 x 12-inch pan, but adjust baking time (start checking at 45 minutes).
