Ingredients

1 1/2 c. flour
1/2 c. evaporated skim milk
4 eggs or equivalent egg substitute
1 Tbsp. baking powder
2 Tbsp. plus 2 tsp. reduced calorie margarine
1 medium onion, chopped
16 oz. can drained pinto beans
18 oz. ground beef or turkey, cooked
1 pkg. dry taco seasoning
8 oz. jar salsa
4 1/2 oz. Cheddar cheese, shredded
Preparation

Spray a 9 x 13-inch baking pan with nonstick cooking spray. Mix flour, milk, eggs and baking powder together and spread into pan.
Saute onion in margarine.
Mix onion, meat, beans, taco seasonings and salsa.
Pour over batter in pan and top with cheese.
Bake at 375\u00b0 for 30 minutes or until cheese is browned. Makes 8 servings.
Low-fat.
