Cajun Potatoes A La Scott - cooking recipe
Ingredients

2 1/2 to 3 lb. potatoes, peeled and cubed
1 lb. bacon, cooked and crumbled
1 onion, chopped
1 (16 oz.) can green beans (Blue Lake), drained
1 tsp. Creole seasoning
Preparation

Heat Dutch oven and fry bacon.
Remove bacon and drain. When cool,
crumble
bacon.
You can reserve some bacon fat or use some oil
or
butter
to
cook
the potatoes.
In the same Dutch
oven, heat
and
cook
the
cubed
potatoes,
stirring constantly. When
potatoes
are
almost tender, add onion and continue cooking until potatoes are tender.
Add green beans, bacon and Creole seasoning.
Mix well and when green beans are warm, serve.
