Pickled Beets - cooking recipe

Ingredients
    2 c. sugar
    2 c. water
    2 c. vinegar
    1 lemon, sliced thin
    1 Tbsp. cinnamon
    1 tsp. cloves
    1 tsp. allspice
Preparation
    Cook small beets until tender. Cool in cold water. Slip off skins. Make syrup. Cover beets and simmer 15 minutes. Seal in hot jars.
