Corn And Zucchini - cooking recipe
Ingredients

1 lb. (3 or 4 medium) zucchini
1 Tbsp. butter
1/2 c. chopped onion
2 eggs, beaten
1 can corn, drained
Swiss cheese
1/4 c. bread crumbs
1 Tbsp. butter, melted
2 Tbsp. grated Parmesan cheese
Preparation

Slice zucchini; cook, covered, in small amount of salt water until tender.
Drain and mash with fork.
Cook onion in butter. Combine eggs, zucchini, onion, corn, cheese, and salt.
Pour into casserole.
Mix butter, bread crumbs, and cheese (Parmesan). Sprinkle on top.
Place on baking sheet and bake at 300\u00b0 until brown and bubbly.
Garnish with cherry tomatoes and parsley.
