Braised Root Vegetables(Carrots, Celery, Parsnips Or Turnips) - cooking recipe

Ingredients
    3 c. prepared vegetables
    2 Tbsp. margarine
    1 small onion, chopped
    2 Tbsp. chopped celery
    1/2 c. water
    salt and pepper
Preparation
    Prepare vegetables by peeling and cutting into inch cubes or strips.
    Brown lightly in the margarine in a heavy saucepan.
    Add onion and celery; cook for 2 minutes, then add water.
    Season with salt and pepper.
    Cover and simmer until tender, about 20 to 25 minutes.
    Remove cover and allow liquid to evaporate.
    Serves 4.
