Exotic Chicken Salad - cooking recipe

Ingredients
    2 1/2 to 3 lb. chicken, cooked and cut into chunks
    1 can water chestnuts, sliced
    1 lb. seedless green grapes
    2 c. celery, chopped
    2 to 3 c. slivered roasted almonds, separated
    2 to 3 c. mayonnaise
    1 Tbsp. soy sauce
    1 Tbsp. curry powder
    2 Tbsp. lemon juice
    1 (20 oz.) can pineapple chunks
    lettuce (Boston or bibb)
Preparation
    Combine first five ingredients.
    Combine mayo, curry powder, soy sauce and lemon juice.
    Toss with chicken and chill several hours.
    Spoon onto bed of lettuce in individual plates and sprinkle with pineapple and 1/2 of almonds.
    I add roasted almonds to salad when ready to serve so they will be crunchy.
