Ingredients

3 eggs, separated
1 c. sugar
1 tsp. vanilla
coconut
1/3 c. flour
2 c. milk
1 (15 oz.) can crushed pineapple, drained
Preparation

Separate eggs; beat egg yolks well and add sugar.
Beat until fluffy.
Add flour, milk and vanilla.
Cook until thick.
Add coconut or pineapple.
Save about 1/4 cup of pineapple to put on top of meringue.
Pour into baked pie shell.
Top with meringue; add coconut or pineapple on top of meringue.
Bake at 300\u00b0 for about 15 minutes or until lightly browned.
