Coconut Chicken Breasts - cooking recipe

Ingredients
    4 boneless chicken breasts
    2/3 c. buttermilk pancake mix
    2/3 c. flaked coconut
    1/2 tsp. paprika
    1/2 c. sweetened condensed milk
    2 Tbsp. Dijon mustard
    1/4 c. melted margarine
Preparation
    Heat oven to 375\u00b0.
    Mix dry ingredients together; set aside. Mix sweetened condensed milk and mustard together.
    Dip chicken in milk mixture, then coat in coconut mixture.
    Bake in ungreased 9 x 12-inch pan at 375\u00b0.
    Drizzle with 1/4 cup melted margarine.
    Bake 35 to 40 minutes or until tender.
    Makes 4 servings.
