Stuffed Zucchini - cooking recipe
Ingredients

4 to 5 medium zucchini
1 1/2 lb. lean ground beef
1 1/2 c. soft bread crumbs
1 Tbsp. minced fresh parsley
1/4 c. grated Parmesan cheese
1 small onion, chopped
1 egg, beaten
1 tsp. salt
1/2 tsp. pepper
1 (10 3/4 oz.) can condensed tomato soup, undiluted
1/2 c. water
Preparation

Wash and trim the ends of the zucchini. Cut in half lengthwise and scoop out pulp. Finely chop pulp.
In a mixing bowl, combine pulp, ground beef, bread crumbs, parsley, Parmesan cheese, onion and egg. Add seasonings.
Fill zucchini shells with meat mixture. Place in a 13 x 9 x 2-inch baking dish. Combine tomato soup and water.
Pour over zucchini. Bake at 350\u00b0 for 45 to 50 minutes. Yields 8 to 10 servings.
