Lemony Catfish In Foil - cooking recipe

Ingredients
    1 lb. catfish fillets
    4 tsp. margarine
    1/3 c. lemon juice
    1/4 to 1/2 tsp. pepper
    1/2 c. carrots, diced
    1/4 c. celery, diced
    1/4 c. green onion, chopped
    2 Tbsp. parsley, snipped or 2 tsp. dried parsley
    2 lemons, thinly sliced
Preparation
    Place catfish on piece of foil about 4 inches longer than fish.
    Melt margarine and add the lemon juice, pepper, carrots, celery, onion and parsley.
    Pour mixture over fish dividing evenly.
    Top fish with lemon slices.
    Bring edges of foil together and fold over several times.
    Twist on the end to form a tail. Tuck other end under to form a point.
    Place on cookie sheet. Bake at 350\u00b0 for 30 minutes or until fish flakes easily.
    Yields 4 servings with 170 calories and 7 grams of fat.
